Mott 32 introduces the newly appointed Executive Chef, Lee Man Sing. Along with our Culinary Director Malcolm Wood; together they have led their esteemed team of talented chefs to concoct a brand new a-la-carte menu at Mott 32. Chef Lee Man Sing earned his executive position from the flagship Mandarin Oriental and received his first Michelin Star while working there. As a highly respected Cantonese Chef in the industry and well known amongst the Chinese culinary scene, Chef Lee Man Sing has achieved numerous accolades from the Hong Kong Tourism Board, including “Best of the Best Culinary Award 2006 and 2009”, where he was awarded twice in this category. He was also appointed as a member of the Hong Kong Chinese Chefs Association and one of the judging panels for HOFEX. Prior to his position at the Mandarin Oriental, he worked at the Fortune Room at The Hong Kong Jockey Club and Hoi Yat Heen at the Harbour Grand Kowloon.
The Mott 32 kitchen brigade led by Chef Lee Man Sing will present you with an epicure dining experience by offering a series of signature dishes, which truly represent a new delicate take on Chinese cuisine.
The new extensive a-la-carte menu comprises of traditional Chinese cuisine with a modern twist such as the famous Apple Wood Roasted 42 Days Peking Duck, and the Barbecue Pluma Iberico Pork with Yellow Mountain Honey. The menu also showcases a number of Chef Lee’s new creations including perennial favourites such as the Wok Fried Australian Lobster with Egg White and Yunnan Ham, Steamed Fillet of Leopard Coral Garoupa with Sea Salt and Ginger, Signature Smoked Black Cod and Pomelo Peel with Bamboo Pith, Black Mushroom in Abalone Sauce.
Chef Lee has prepared smaller plates, in which he adds his own inimitable touches by highlighting the nuances of fresh and seasonal ingredients, such as the South Australian Scallop & Beetroot Dumplings, Hot & Sour Iberico Pork Shanghainese Soup Dumplings, Aystrakuab Waygu Beef Puff, Crispy Pomelo Peel with sesame and Shredded 42 Days Peking Duck Salad with almond and black truffle.
With over 35 years of Chinese culinary experience, he understands the simple, yet integral cooking skills that are involved when preparing a traditional Chinese dish. The menu perfectly illustrates Chef Lee Man Sing’s masterful skills in creating authentic dishes alongside his modern flair approach.
Chef Lee graduated with distinction from the Chinese Culinary Institute where he attended the Master Chef level class and was the youngest graduate. Taking pride in understanding each ingredient, he uses a contemporary approach when recreating authentic Chinese cuisine by sourcing the freshest ingredients from our local and overseas suppliers. He uses traditional cooking techniques with a touch of modern flair to create dishes that are unique in essence and presented with artful presentations.
Mott 32 is located in the Standard Chartered Building, 4-4a Des Voeux Road, right in the heart of Central, Hong Kong. It is 7,500 square feet with 5 private rooms and can accommodate up to 170 diners, at any one time. Mott 32 is open for lunch and dinner seven days a week. The new menu is available during both lunch and dinner services.
