Arcane celebrates its 8th Anniversary
A commemorative tasting menu featuring its most renowned dishes and conscientiously sourced ingredients
hane Osborn’s Michelin-starred flagship venue Arcane is celebrating eight years in Hong Kong this November. To mark this tremendous milestone, the restaurant will be offering a limited-run tasting menu throughout November, bringing back guests’ all-time favourite dishes and ingredients.
Through eight luxurious courses, guests will take a culinary journey from Arcane’s early days to its current status as one of the city’s leading sustainably-minded restaurants. As ever, a collaboration by the whole culinary team at Arcane, the menu brings back some of the restaurant’s most renowned dishes that have featured on its menu over the years including Slow Braised Wagyu Short Rib, Jerusalem Artichokes, Dau Miu, Sauce Diable, and Sautéed Potato Gnocchi with Morel and Shiitake Ragout, Charred Onion Purée, Hazelnut Crumb, and Fresh White Truffle.
Guests will also enjoy an Ebisu Oyster with Wasabi Gel and N25 Oscietra Caviar and Japanese Fruit Tomato with Imam Bayildi and Vadouvan Sour Cream, Pickled Baby Aubergine by Chef de Cuisine Sebastian Lorenzi, and an exclusive version of Shane Osborn’s renowned scallop dish – the Hokkaido Scallop Ceviche with Salt Cod Mousse, Fennel, Apple, Ginger, and Soy Dressing, which he presented on The Final Table, Netflix’s first-ever world-class cooking competition.
Yuzu and lemon posset, white chocolate tuile, blood orange, and yoghurt ice cream
Prepared by Pastry Chef Lyca Ramos, dessert is a refreshing Yuzu and Lemon Posset with White Chocolate Tuile, Blood Orange, and Yoghurt Ice Cream, and the meal is rounded off with a sumptuous selection of Petits Fours – Chocolate Fudge, Vanilla Cannelé Apple Pâte De Fruit – bringing Arcane’s commemorative menu to a close in style.
As Autumn finally arrives and the months grow cooler, this special menu arrives at the perfect time to be enjoyed on the restaurant’s outdoor garden terrace.
As the first Australian to be awarded one and two Michelin stars, for Pied à Terre in London and Arcane in Hong Kong, Shane Osborn is a passionate Chef and Restaurateur who holds a strong locavore vision, which he follows as much as possible throughout all of The Arcane Collective’s establishments. With an ingredient-led, unpretentious, and multicultural approach at its heart, Arcane continues to enjoy close relationships with specialist, artisan farmers, growers, and suppliers to produce dishes of the highest quality, while being socially and environmentally aware.
Since opening its doors in the heart of Central in November 2014, Arcane has established a niche for itself and a loyal client base, favoured for its low-key yet discerning culinary experience. Now helmed by Chef de Cuisine Sebastian Lorenzi, the restaurant is looking confidently to the future with many more years ahead at the heart of Hong Kong’s ever-growing dining scene.
