November marks a refreshing new chapter of relaxed fine dining for Brut! with the appointment of a new Head Chef. The intimate, 24-seat restaurant is known for its creative plates and distinct wine recommendations.
Joining the kitchen is Head Chef CJ Jalandoni, who in true Brut! fashion, has been encouraged to explore his particular point of view on food. Hailing from Manila in the Philippines and with over 12 years’ hospitality experience, the former Cultivate Chef de Cuisine and Ducasse mentee will deliver a menu that celebrates the flavours of the Philippines whilst utilising the most painstaking classic French culinary techniques. The talented chef will introduce delectable new dishes simultaneously inspired by his culinary background and defining childhood flavours. His suite of new Brut! dishes are both complex and comforting, elevating under appreciated Filipino flavours to invigorating new heights. CJ’s new creations will be served in a manner that is authentic to the neighbourhood eatery — out of the ordinary yet entirely approachable.
