SKYE Roofbar & Dining, at The Park Lane Hong Kong, a Pullman Hotel, is delighted to announce its exciting collaboration with Chef Thierry Drapeau, former 2-star Michelin Chef, and current Head Chef at Signature Bangkok. This project perfectly aligns SKYE’s contemporary French farm-to-table concept with Chef Thierry’s French and floral gastronomy and promises to bring an innovative and exploratory dining experience to the vibrant neighborhood of Causeway Bay.
Chef Thierry will be importing his “cuisine of the soil” philosophy to SKYE, bonding guests to the unique story of each ingredient’s origin, and the ‘terroir’ or land they come from. Throughout the collaboration, Chef Thierry will bring his extraordinary talent and decades of experience, to create a haven of French cuisine in Hong Kong.
This highly anticipated partnership introduces a brand-new winter menu curated by Chef Thierry Drapeau in collaboration with The Park Lane Hong Kong, inspired by the “cuisine of the soil” concept. On the 19th and 20th of January 2024, guests can expect a rustic array of the finest and freshest ingredients, sourced locally from farmers, to be enjoyed in SKYE’S visually stunning rooftop venue. The 6-course dinner menu exhibits dishes that draw on the subtle and delicate notes of edible flowers and herbs to craft beautiful presentations with light and highly concentrated flavours, featuring signature dishes La Mer – delicately poached langoustine complemented by the vibrant sweetness of carrot mousseline, miso siphon and Tagete flowers; and Le Canard – “Challans” duck with crips, golden skin, enhanced by braised salsify, cauliflower mousseline and sauce salmis. Each expressive dish further guides customers to connect with nature and culture through the love of food.
