Inspired by long summer days, new seasonal dishes by Chef Jamie Draper debut on the ever-evolving Melody menu. With a passion for exploring new flavours and pushing culinary boundaries, Chef Jamie’s creations reflect his extensive culinary knowledge and global influences.

New to the small plates section ‘For the Table’ is an impossibly tender Octopus Ceviche with sweet and smoky harissa (HK$328) as well as Crispy Lamb Ribs (HK$288) with pickled turnip, golden raisins and tzatziki.

Spring lamb also features in the form of a main. The Lamb Neck Fillet (HK$398) is accompanied by a new iteration of Chef Jamie’s famed homemade sausages, this time a piccante lamb merguez, presented with Hong Kong’s creamiest mash. Bright and fresh asparagus and salsa verde complete this dish.

The Whole Turbot (HK$488) revives a plate from Melody’s opening days, this time with a summery tomato and tarragon beurre blanc, while Sea Bass (HK$458) with steamed potatoes, broccolini, fragrant fennel and a saffron sauce is a brand new addition that hits the spot.

The creative Provençal Stuffed Courgette (HK$138) with puttanesca sauce and fresh basil is a perfect meat-free main, or snap-worthy side dish. Speaking of sides, the new Tomato Salad with Pickled Watermelon and Feta (HK$88) is not to be missed.
