Racines welcomes Chef Vincent Thierry for a special one-night collaboration

In celebration of its two-year anniversary, Racines welcomes Chef Vincent Thierry of Chef’s Table—a two MICHELIN-starred restaurant in lebua at State Tower in Bangkok—to their kitchen for one night only on Tuesday 5 November, 2024. Chef Vincent played a pivotal role in shaping the career of Racines’ chef-founder, Romain Dupeyre, mentoring him when he first arrived in Bangkok. Together, they crafted the opening menus for Sirocco, lebua’s award-winning Mediterranean concept. For this special anniversary event, guests can look forward to an unforgettable evening of elevated, contemporary French cuisine as the two chefs reunite to blend their unique styles in an intimate, casual fine dining setting.

“Having this chance to work with Chef Vincent again is a true full-circle moment for me. His mentorship shaped my approach to technique, precision, and creativity in the kitchen. I’m excited to bring our shared love for French gastronomy and celebrate Racines and how far we’ve come in this special night,” says Chef Romain. “It makes me proud to see what Chef Romain has done with Racines, and it’s a joy to come together again for this special occasion. As Racines celebrates its 2-year anniversary, this collaboration dinner is a testament to the restaurant’s rise as a sought-after destination for fine casual French fare in Hong Kong’s vibrant dining scene. While Racines has quickly become known for elevated Southern French cuisine, this special evening also welcomes the return of Chef Vincent Thierry to Hong Kong, whose former leadership at Caprice led the restaurant to earn its coveted Michelin stars, helping to shape the city’s fine dining landscape. Together, they will craft a memorable dining experience that reflects the spirit of Racines—blending tradition with innovation, and offering guests a one-of-a-kind experience that reflects the restaurant’s commitment to excellence and its continuing evolution in Hong Kong’s culinary landscape.

Now living in Bangkok, Chef Vincent continues to make a lasting impression at lebua, where he leads the culinary program at the renowned Chef’s Table, offering one of Bangkok’s most prestigious dining experiences. Here, he showcases his philosophy that “luxury lies in simplicity,” preparing contemporary French dishes that focus on highlighting the natural essence of each ingredient. With an open kitchen layout, guests are treated to an immersive dining experience, as Chef Vincent and his team craft beautifully plated dishes with refined techniques, celebrating the natural flavors of every element.

The anniversary dinner menu will be served exclusively at Racines on Tuesday 5 November, in two seatings, and complimentary champagne on arrival for all guests. Reservations for the first seating are available at 6:00pm and 6:15pm, priced at HKD2,588 per person for five courses. The second seating begins at 8:45pm, priced at HKD2,788 per person for 7 courses. All prices are subject to 10% service charge. Reservations can be made here.
