Pak Loh Chiu Chow Private Kitchen Launches a New Tasting Menu: Presenting Traditional Chiu Chow Flavours with a Modern Touch

Building on Pak Loh Chiu Chow’s 57-year legacy in Hong Kong, the newly established Pak Loh Chiu Chow Private Kitchen, which opened in October, proudly presents its Chinese New Year “Essence of Chiu Chow Delicacies” Tasting Menu starting today. Designed to celebrate the festive season, this exquisite dinner menu highlights a range of classic Chiu Chow delicacies reimagined with premium seasonal ingredients and modern cooking techniques. By reviving near-forgotten flavours, the menu brings these cherished culinary treasures back to the forefront for discerning diners.

Priced from HK$980 per person (a minimum of two guests), the “Essence of Chiu Chow Delicacies” Tasting Menu invites diners to customise their own 10-course feast across seven thoughtfully curated sections. In celebration of the upcoming Lunar New Year, the menu also features dishes imbued with symbolic meanings of prosperity and auspiciousness, offering a refined and flexible approach to festive dining.

The refined ‘Appetiser’ section introduces two innovative creations: Pan-Fried Semi-Dried Oysters in Honey Sauce with Chinese Sausage and Egg Roll Wrapped with Minced Shrimp, Chinese Sausage and Vegetables. The former features fragrant local dried oysters paired with savoury Chinese sausages in a candied honey sauce, elegantly presented in golden cups that symbolise abundance. The latter is a delicate egg roll stuffed with shrimp paste encasing Chinese sausage, served with a decorative glaze and vegetables in the shape of a traditional knot, representing unity and fortune.

For a warming prelude, the Bird’s Nest and Partridge Broth from the ‘Soup’ section stand out. This nourishing, velvety soup is slow-cooked to extract the full essence of partridge, paired with finely minced meat and nourishing Chinese yam for a rich and restorative dining experience—perfect for the cooler season.

Elegant ‘Seafood’ selections take centre stage in complex dishes like the Steamed Sole with Ginger in Bean Sauce, a dish that marries the tender sweetness of the fish with a Chiu Chow bean sauce and ginger. Equally impressive is the Steamed Live Blue Lobster with Salted Egg and Garlic, where tender lobster meets the umami richness of golden salted egg and aromatic garlic, a dish brimming with symbolic wealth and prosperity.

Among the ‘Meat’ offerings, the Chiu Chow Eight Treasures Duck with Chestnut is a masterpiece of traditional craftsmanship, requiring over seven hours of meticulous preparation. Stuffed with a medley of premium ingredients, including dried scallops, chestnuts, and mushrooms, this intricate dish delivers balanced textures and flavours, embodying the essence of Chiu Chow cuisine.

Steamed Live Blue Lobster with Salted Egg and Garlic

The Seasonal ‘Vegetable’ selection offers comforting classics like the Stewed Hand-Made PorkBall with Leaf Mustard Pot, a delicate interplay of tender meatballs and vibrant greens that emblematise growth and prosperity. Meanwhile, the ‘Rice and Noodles’ section features the refined Stewed Rice with Abalone in Abalone Sauce, a dish the chef prepares at the tableside with striking contrasting flavours between the umami whole abalone and soothing warm rice. Ending on a sweet note, the menu’s Duo Dessert presents an elegant pairing of seasonal ‘Dessert’ creations that are guaranteed to leave a lasting impression.
