Institut Disciples Escoffier mentor and protégé collaborate to integrate sustainability and creativity
Towngas’ flagship restaurant, CulinArt 1862, is thrilled to announce the appointment of its new culinary leadership team. Headed by the dynamic duo Emmanuel Soulière and Shine Chiu, the team is dedicated to blending culinary artistry with sustainable development principles, bringing fresh innovation to the restaurant.
With a foundation rooted in Environmental, Social, and Governance (ESG) principles, the team collaborates with local farms to promote eco-conscious dining. By emphasizing local ingredients, they aim to create unique and responsible dining experiences for their guests.
Culinary Director Emmanuel Soulière
Chef Emmanuel Soulière brings a distinguished global culinary pedigree to CulinArt 1862. With a career spanning Michelin-starred kitchens and luxury hotels across Asia, Europe, and the Middle East, he has earned accolades such as “Chef of the Year” and recognition in prestigious culinary competitions. Notably, he has served as Executive Chef at Conrad Beijing and Hilton properties in Singapore and Shanghai, where he orchestrated large-scale events, including the catering for 32,000 guests at the Shanghai Rolex Masters. A passionate mentor, Emmanuel plays a pivotal role at the Institut Disciples Escoffier, guiding and inspiring the next generation of culinary talent through education and competition.
Most recently, Emmanuel returned to his native France to establish *Le Grill d’Henry* in Haute Provence, a destination that showcases his passion for blending refined artistry with rustic charm. The restaurant highlights organic, locally sourced ingredients, prepared over a traditional wood fire to deliver extraordinary dishes that celebrate the region’s natural character. Known for his creativity and precision, Emmanuel’s culinary philosophy emphasizes enhancing flavours with thoughtful techniques and seasonings, crafting memorable dining experiences that seamlessly unite sophistication with nature’s bounty.
Executive Chef Shine Chiu
Chef Shine Chiu brings over 20 years of culinary excellence to his role at CulinArt 1862, with a refined expertise in Thai, Chinese, and French cuisines. Having worked at prestigious luxury hotels and restaurants, he has earned distinguished accolades, including the Best Student award from the Disciples Escoffier Diploma in Cuisine and two Silver Awards at the Best of the Best MasterChef Culinary Exchange Competition.
