As the reimagined Regent Hong Kong continues to unveil its transformed facilities and immersive experiences, it is excited to announce the highly anticipated return of Nobu, the world-renowned restaurant founded by celebrity chef Nobu Matsuhisa and Robert De Niro, to its celebrated Dining Destination. As the hotel prepares for its Grand Opening, the relaunch of Nobu signals a significant moment. Known for its unique style of Japanese cuisine with Peruvian influences crafted with top-quality ingredients, Nobu is not just a restaurant – it’s a dining destination that promises an exceptional experience with Nobu’s warm and attentive service with kokoro (‘from the heart’) and omotenashi, the Japanese spirit of hospitality.
 
Diners will once again be tantalised by Nobu’s signature dishes including his famous Black Cod with Miso, Yellowtail Jalapeño and Toro Tartare with Caviar alongside melt-in-your-mouth New-style Sashimi and Rock Shrimp Tempura with Creamy Spicy Sauce. The menu also features South American-inspired dishes like Tirodito and Nobu Ceviche, a nod to Chef Nobu’s time in Peru where he developed his signature “Nobu-style” cuisine. An enticing beverage menu showcasing Nobu-style cocktails cocktails and world-class Nobu sake brewed exclusively by Hokusetsu brewery for Nobu restaurants worldwide complements the food offering. Nobu Hong Kong’s extensive wine list includes Nobu’s own Matsuhisa Chardonnay from Sonoma County, Matsuhisa Cabernet Sauvignon from Napa Valley, and private label Nobu Champagne by Louis de Sacy, a family- owned vineyard in France’s Grand Cru region.

Jason was classically trained in western cuisine in the USA and found his niche when joining Nobu 57 in New York in 2007. With an impressive resume that showcases the breadth and depth of his experience, Jason has worked on the opening teams at NOBU restaurants in Dubai and Beijing and had two postings at NOBU InterContinental Hong Kong.
