This exclusive dish, available for a limited time only, promises to delight gourmands with its innovative blend of premium ingredients and Chef Yamamoto’s unparalleled commitment to quality and excellence.
Since 2006, Konjiki Hototogisu has been renowned for its special clam-based ramen soup base. The new Foie Gras Porcini Chicken Ramen features an equally impressive Shoyu Chicken & Fish Soup, crafted from over 40kg of whole chicken, including bones, feet, and skin, simmered for six hours with a selection of vegetables such as potatoes and onions. The result is a rich, flavourful broth that is then enhanced with a fish soup made from three different types of natural dried fish from Japan, creating a complex and aromatic foundation. The two broths are combined and finished with a homemade chicken oil, extracted from 100% Japanese chicken skin, to add a luxurious sheen and depth of flavour.
The ramen is adorned with toppings that elevate the dish to gourmet status. The Japanese Chicken Breast, slow-cooked at 65 degrees Celsius for tenderness, is complemented by decadent Pan-fried Foie Gras, which adds a rich, buttery texture that is both indulgent and satisfying. Konjiki Hototogisu’s signature ramen noodles are a testament to Chef Yamamoto’s innovation and are painstakingly made from five different types of 100% Japanese flour, including the special “haru-yo-koi” wheat flour from Hokkaido, typically used in bread and bakery products.
