Dishes like the Snapper Sashimi, Charcoal Grill Eel, and Caviar Sea Urchin Hairy Crab showcase the chefs’ finesse, while the use of rare Binchotan charcoal adds depth and smokiness to offerings like Wagyu Ox Tongue Amiyaki and Hokkaido Scallop Isobeyaki.
