In celebration of Racines’ one-year anniversary, chefs and co-owners Romain Dupeyre and Adrien Castillo are joining forces with Guillaume Galliot, Executive Chef of three-Michelin starred Caprice, for an exquisite six-hand collaboration at Racines on November 5. The 7-course tasting menu promises to take guests on an unmatched French gastronomic journey full of inspiration and finesse, featuring new, exclusive creations co-created by the three chefs. Together, Chef Romain, Chef Adrien and Chef Guillaume will explore the use of diverse seasonal ingredients and techniques to bring classic French savoir-faire to new heights.
“Racines is a celebration of friendship, brotherhood, and pride in our roots, so there’s no better way to celebrate our one-year anniversary than for me and Romain to team up with Chef Galliot, whom I used to work with at Caprice, to create a special menu that celebrates French culinary excellence but also showcases our individual culinary styles and techniques,” said Chef Castillo.
Highlights from the menu include Kristal Caviar Kaviari, where the luxurious caviar sourced from Plantin Kaviari takes center stage, the Hong Kong branch of two worldwide renowned French gastronomy houses which serve high-end truffle and Caviar. It is complemented by the interplay of smoked eel, bavaroise of cauliflower, bergamot and micro fennel, showcasing the culinary artistry at its finest. Another standout dish is Duck, which cooked on the bones and marinated with an array of spices, then sous-vide cooked and roasted to perfection, accompanied by persimmon pureé, cameralized turnip confit infused with ras el hanout (a vibrant blend of over a dozen Moroccan spices) and rich duck jus.
Hailing from France, the three Michelin-starred Chef Guillaume Galliot discovered his passion in cooking at a fairly young age. His culinary career began at Le Jardin des Sens, a three Michelin-starred restaurant in Montpellier, France where he trained under influential chefs and developed a lighter touch influenced by Mediterranean flavours. He then travelled to New York, the Caribbean, Singapore, and Beijing, honing his skills and exploring Chinese cuisine. In 2010, he opened his own culinary venture, The Tasting Room By Galliot in Macau, and earned two Michelin stars in 2016 and 2017. Now the Executive Chef at Caprice, Galliot showcases classic French savoir-faire with a global twist, skilfully blending flavours from around the world.
