Wagyu Shoyu Ramen Launches at Konjiki Hototogisu

Konjiki Hototogisu, the Tokyo-born ramen brand celebrated for its  five consecutive years of Michelin-starred creations, launches its newest masterpiece: Wagyu Shoyu Ramen (HK$148). Available for a limited time from 18 March 2025 at all Hong Kong locations, this luxurious dish combines the richness of A5 Arita Wagyu Beef with Chef Yamamoto’s decades of culinary artistry.

Konjiki Hototogisu is the exclusive recipient of A5 Arita Wagyu Beef in Hong Kong. The prized beef from Miyazaki Prefecture, Japan, features beautiful marbling, unparalleled tenderness and a rich flavor. Miyazaki beef is the highest grade of Wagyu in Japan, fed with only 10 kinds of carefully selected grains and four kinds of self-cultivated pasture grasses, all of which are originally blended. The premium cattle are watered with spring water. The beef arrives in Hong Kong within two weeks of slaughter, ensuring customers can enjoy the freshest top-quality beef.

Since its founding in 2006, Konjiki Hototogisu has captivated diners with its signature broths and meticulous craftsmanship. The Wagyu Shoyu Ramen features a deep umami-rich broth, crafted from a blend of three premium meats: beef, chicken and duck and slow-cooked for six hours to perfection. Toppings include melt-in-the-mouth premium A5 Arita Wagyu Beef, perfectly seared on a hot iron plate to lock in the juices and fat, allowing the sweet and aromatic flavors of the beef to intertwine in your mouth. It is paired with a Japanese soft-boiled hen‘s egg with custard-like yolk, slow-cooked duck breast, fried onions with black vinegar and a drizzle of freshly made Wagyu oil for added decadence. A sprinkle of black truffle adds an earthy aroma and a touch of sophistication, to elevate the layers and aroma of the Wagyu Shoyu Ramen.

The ramen is served with Konjiki Hototogisu’s signature noodles, made from Hokkaido “haru-yo-koi” wheat flour, renowned for its springy texture. For a complete dining experience, guests can enjoy the Ramen Set (HK$178), which includes Wagyu Shoyu Ramen, three home-made Japanese Dumplings and a choice of cold drink, creating an extraordinary ramen feast.
